-8oz cream cheese- room softened
-3 sticks room softened butter
– mix above together
Mix in 1 cup white flour. Then mix in 1/2 cup flour at a time until the batter is swisher able but not sticky.
Shape batter into a 2 inch thick square and then cover completely with plastic wrap.
Cool in refrigerator for 2 or more hours.
Lay a mixture of sugar and confectionary sugar on a work surface .
Cut dough into four pieces ( work on one piece at a time)
Roll each piece, to roughly 1/4 inch thickness, and cut and then cut roughly 2 by 2 inch squares
Place each square onto parchment lined cookie sheet.
Place a teaspoon full of jam or preserves ( some suggest mix with peanut butter.) length wise on 2 inch square.
Using egg whites, join the opposite sides of cookie together to seal
I needed two cookie sheets.
Bake at 350degrees F for about 25 minutes. Check if the cookies are starting to brown at edges before the 25 minutes. If so , remove from oven.
Note 1: had a suggestion from a granddaughter , Della, that they could be baked a little longer.
Note:2 sealing the batter tips together using finger tips dipped in water is an alternative.
