Baking biscottis👍
Ingredients:
– 2 cups all-purpose flour
– 1 1/2 teaspoons baking powder
– 1/4 teaspoon salt
– 3/4 cup granulated sugar
– 6 tablespoons unsalted butter, softened
– 2 large eggs
– 1 teaspoon vanilla extract
– 3/4 cup whole almonds, toasted and coarsely chopped
Instructions:
1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, beat the sugar and butter until creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. Gradually add the flour mixture to the sugar mixture, stirring until well blended. Stir in the almonds.
5. Divide the dough in half. Shape each half into a 9-inch-long log on the prepared baking sheet. Flatten the logs slightly.
6. Bake for 25-30 minutes, or until lightly golden brown and firm to the touch.
7. Remove the logs from the oven and let cool for 10 minutes. Reduce the oven temperature to 325°F.
8. Using a serrated knife, cut each log into 1/2-inch-thick slices on the diagonal. Place the slices back on the baking sheet, cut side down.
9. Bake for 10-12 minutes, or until lightly golden brown and crisp. Flip the biscotti over and bake for an additional 5-7 minutes, or until lightly golden brown and crisp.
10. Remove the biscotti from the oven and let cool completely on the baking sheet. Serve and enjoy!
